A comforting, quick weeknight dinner that captures the flavors of lasagna in a soup form, featuring tender pasta, rich beef broth, and a creamy ricotta topping.

Ingredients

  • 1 lb ground beef (80/20 lean)
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes (San Marzano preferred)
  • 2 tbsp tomato paste
  • 4 cups beef broth (low-sodium)
  • 810 lasagna noodles (broken in half or no-boil)
  • 15 oz whole milk ricotta cheese
  • 1 egg yolk
  • 1 tsp Italian seasoning
  • 1 tbsp fresh chopped basil (for dollop)
  • 1/2 cup heavy cream (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish (optional)

Instructions

  1. Heat olive oil in a large Dutch oven or heavy pot over medium heat. Add diced onion and a pinch of salt; cook until soft and translucent (about 4 minutes).
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground beef, breaking it into small crumbles with a wooden spoon. Cook until browned and no pink remains. Drain excess fat if necessary.
  4. Stir in tomato paste and Italian seasoning; cook for 1 minute to toast.
  5. Pour in crushed tomatoes and beef broth. Scrape up any browned bits from the bottom of the pot.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes.
  7. Add lasagna noodles (broken in half) to the pot. Stir well to prevent sticking.
  8. Simmer for another 10 minutes or until noodles are tender. If using no-boil noodles, add them at this stage.
  9. Stir in heavy cream (if using) and heat through for 1 minute. Do not boil.
  10. In a small bowl, whisk together ricotta cheese, egg yolk, chopped basil, salt, and pepper until smooth.
  11. Ladle hot soup into bowls. Drop a generous dollop of the ricotta mixture on top of each serving.
  12. Garnish with fresh basil leaves and grated Parmesan cheese if desired.

Notes

For the best texture, do not overcook the noodles as they will continue to soften in the hot soup. Toasting the tomato paste and spices before adding liquid enhances flavor. If using no-boil noodles, you may need to add an extra cup of broth. The ricotta dollop should be added fresh at serving time; it does not freeze well.
