  • 1/4 cup fresh basil leaves, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/8 teaspoon baking soda
  • 1 teaspoon sugar
  • Extra fresh basil leaves (for garnish)
  • A drizzle of heavy cream or olive oil (for garnish)
  • Croutons or crusty bread (for serving)
  • Shredded Parmesan cheese (for serving)

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat until foamy and fragrant, about 1 minute.
  2. Add the diced onion and cook for 5-7 minutes, stirring occasionally, until soft and translucent.
  3. Add the minced garlic and cook for 30-60 seconds until fragrant.
  4. Pour in the fire-roasted crushed tomatoes and vegetable broth. Stir, scraping up any browned bits from the bottom.
  5. Add salt, pepper, red pepper flakes (if using), and sugar. Stir to combine. Bring to a gentle simmer, then reduce heat to low and cook for 10 minutes.
  6. Sprinkle in the baking soda and stir until the foaming subsides, about 30 seconds.
  7. Remove from heat and let cool for 2-3 minutes. Blend the soup using an immersion blender directly in the pot, or in batches in a countertop blender (fill no more than halfway). Blend until completely smooth, about 30-45 seconds.
  8. Return the blended soup to the pot (if using a countertop blender) and place over low heat. Stir in the heavy cream and chopped fresh basil. Taste and adjust seasoning as needed.
  9. Warm the soup through for 2-3 minutes, stirring occasionally. Do not let it boil after adding the cream.
  10. Ladle into bowls and garnish with fresh basil leaves, a drizzle of cream, and croutons or Parmesan if desired. Serve immediately with crusty bread.

Notes

For a dairy-free version, substitute butter with olive oil and heavy cream with full-fat coconut milk. The soup can be made ahead and tastes even better the next day. To prevent cream from curdling, never let the soup boil after adding the cream and ensure the cream is at room temperature.
