  • 1 cup roasted, peeled, and chopped Hatch green chiles (fresh or canned)
  • 8 oz cream cheese, softened (full-fat preferred)
  • 1/4 cup sour cream
  • 1/2 cup shredded Monterey Jack or mild cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly cracked black pepper to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine softened cream cheese, sour cream, shredded cheese, chopped Hatch green chiles, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth and creamy. Adjust seasoning if needed.
  3. Pat chicken breasts dry with paper towels. Using a sharp knife, carefully slice each breast lengthwise to create a pocket without cutting all the way through.
  4. Spoon about 3 tablespoons of the creamy Hatch green chili mixture into each chicken pocket. Secure the opening with toothpicks or kitchen twine.
  5. Heat olive oil or butter in a skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let the chicken rest for 5 minutes before slicing or serving.
