This Creamy Garlic Butter Chicken is a quick and easy one-pan dinner that comes together in under 30 minutes. With a rich, silky garlic butter sauce and perfectly seared chicken, it’s perfect for busy weeknights or impressing guests.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680g)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream (240ml)
  • ½ cup chicken broth (120ml)
  • ½ cup grated Parmesan cheese (50g)
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and paprika. Let them sit at room temperature for 10 minutes while you mince the garlic and chop the parsley.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering. Carefully place the chicken in the pan and cook for 5-6 minutes without moving them, until a deep golden-brown crust forms. Flip and cook another 4-5 minutes, until the internal temperature reaches 160°F (71°C). Transfer the chicken to a plate and tent loosely with foil. Do not wipe out the pan.
  3. Reduce the heat to medium. Add the butter to the same pan and let it melt, scraping up the browned bits from the bottom. Once the butter is foamy, add the minced garlic and stir constantly for 30-45 seconds until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any remaining bits. Let it bubble for 2 minutes until slightly reduced. Slowly pour in the heavy cream while stirring. Add the red pepper flakes if using. Let the sauce simmer gently for 3-4 minutes, stirring occasionally, until it thickens enough to coat the back of a spoon.
  5. Remove the pan from the heat and stir in the grated Parmesan cheese until fully melted and smooth. Taste and adjust seasoning with salt and pepper.
  6. Return the chicken breasts to the pan, nestling them into the sauce. Spoon some sauce over the tops. Let everything simmer together on low heat for 2-3 minutes to warm the chicken through.
  7. Sprinkle with fresh parsley and an extra crack of black pepper. Serve immediately over pasta, rice, mashed potatoes, or with crusty bread.

Notes

For extra sauce, double the cream and broth amounts. The dish tastes even better the next day as flavors meld. To prevent sauce from curdling, keep heat gentle and avoid boiling after adding cream. Take pan off heat before adding Parmesan to prevent clumping.
