A quick and easy creamy cucumber feta salad with fresh dill and Greek yogurt dressing. Perfect for summer barbecues, potlucks, or a light meal.

  • 200g (7 oz) feta cheese, crumbled
  • 1/2 cup (120g) plain Greek yogurt
  • 1/4 cup fresh dill, chopped
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper, freshly ground

Instructions

  1. Prep the cucumbers: Wash and slice cucumbers in half lengthwise, then slice into half-moons about 1/4 inch thick. You should have about 4 cups.
  2. Salt the cucumbers (optional but recommended): Place sliced cucumbers in a colander, sprinkle with 1/2 teaspoon salt, toss gently, and let sit for 10 minutes. Pat dry with a towel.
  3. Slice the red onion: Cut red onion in half, peel, and slice one half into thin half-moons. Soak in cold water for 5-10 minutes to mellow flavor if desired, then drain and pat dry.
  4. Make the dressing: In a small bowl or mason jar, combine Greek yogurt, lemon juice, olive oil, garlic powder, and black pepper. Whisk or shake until smooth. Taste and adjust.
  5. Chop the dill: Rinse and pat dry fresh dill, remove thick stems, and chop feathery fronds to get about 1/4 cup loosely packed.
  6. Crumble the feta: Pat feta dry and crumble into small, uneven pieces using fingers or a fork.
  7. Assemble the salad: In a mixing bowl, combine sliced cucumbers, sliced red onion, chopped dill, and crumbled feta. Pour dressing over and gently toss until evenly coated.
  8. Let it rest: For best flavor, let the salad rest for 30 minutes. It can be served immediately if desired.
  9. Final taste and adjust: Before serving, taste and adjust salt, lemon, or pepper as needed.
