A thick, creamy, and comforting slow cooker white chicken chili that balances tangy lime and warm cumin. This foolproof recipe uses a bean-blending technique for a luxurious texture without needing heavy cream or flour.

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1 medium yellow onion, diced
  • 34 cloves fresh garlic, minced
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern), drained and rinsed
  • 1 can (4 oz) diced green chiles, including juices
  • 2 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 8 oz cream cheese, cubed
  • 1/2 cup heavy cream
  • Juice of 12 limes
  • Fresh cilantro for garnish

Instructions

  1. Dice the onion and mince the garlic. If using raw chicken, cut into large chunks. Place onion and garlic at the bottom of the slow cooker.
  2. Place chicken pieces on top of the aromatics. Sprinkle cumin, oregano, smoked paprika, salt, and black pepper over the chicken.
  3. Pour in chicken broth, diced green chiles (with juices), and rinsed white beans. Ensure chicken is mostly submerged.
  4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken shreds easily.
  5. Remove chicken and shred into bite-sized pieces using two forks.
  6. Scoop out about 1.5 cups of beans and broth. Blend until smooth using an immersion blender or countertop blender to create a thickener.
  7. Return shredded chicken and blended bean mixture to the pot. Stir in cream cheese and heavy cream until melted and incorporated.
  8. Turn off heat or switch to WARM. Stir in fresh lime juice and adjust salt to taste.
  9. Serve hot, topped with fresh cilantro, shredded cheese, and sour cream if desired.

Notes

For best results, use full-fat cream cheese. If the chili is too thick, add more broth; if too thin, cook uncovered on HIGH for 30 minutes. Do not add dairy at the beginning to prevent separation. Rotisserie chicken can be used by adding it in the last 30 minutes of cooking.
