Instructions

  1. Prep your chicken first. If using a rotisserie chicken, remove the skin and shred the meat with two forks to get about 2 cups. If cooking your own, poach two boneless skinless chicken breasts in simmering water for 15-20 minutes until cooked through, then shred.
  2. Soften your cream cheese. Take it out of the fridge about 30 minutes before starting, or microwave for 15-20 seconds until soft but not melted.
  3. Combine the creamy ingredients. In a mixing bowl, stir together the softened cream cheese, ranch dressing, sour cream, and buffalo sauce until smooth.
  4. Add the seasonings. Sprinkle in the garlic powder and onion powder, and stir to combine.
  5. Layer everything in the crockpot. Spread the shredded chicken evenly across the bottom. Pour the creamy mixture over the top, then add the shredded cheddar cheese and crumbled blue cheese. Drop the tablespoon of butter on top.
  6. Stir it all together until well combined, ensuring no pockets of dry chicken or unmixed cream cheese remain.
  7. Cook on low. Cover and cook on low heat for 2 hours. After about an hour, give it a stir to redistribute everything.
  8. Check the consistency. After 2 hours, the dip should be hot, bubbly, and creamy. If too thin, cook for another 15-20 minutes with the lid off. If too thick, stir in a tablespoon of milk or extra buffalo sauce.
