  • 3 cups (18 oz / 510g) white chocolate chips or chopped bars (recommend Ghirardelli or Guittard)
  • 1 can (14 oz / 397g) sweetened condensed milk
  • 1 cup (120g) dried cranberries
  • 2 tablespoons (28g) unsalted butter
  • 1 teaspoon (5ml) vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly grease the parchment with butter or non-stick spray.
  2. In a medium saucepan over the lowest possible heat, combine the white chocolate, sweetened condensed milk, and butter. Stir constantly with a silicone spatula until the mixture is smooth and glossy, about 5-7 minutes. Remove from heat immediately.
  3. Stir in the vanilla extract and salt until well combined.
  4. Let the mixture cool for about 2 minutes, then gently fold in the dried cranberries.
  5. Pour the fudge mixture into the prepared pan and spread into an even layer using the spatula.
  6. Refrigerate for at least 3 hours, or overnight, until completely firm.
  7. Lift the fudge out of the pan using the parchment overhang. Place on a cutting board and cut into 1-inch squares with a sharp knife, wiping the knife clean between cuts.

Notes

Use high-quality white chocolate for best results. Avoid white baking chips labeled ‘morsels’ as they contain stabilizers. For clean cuts, wipe the knife between slices. The fudge tastes even better after a day or two in the fridge.
