A rich, velvety dip combining homemade caramel, cream cheese, and crisp apples. This easy-to-make treat is perfect for fall gatherings, parties, or as a comforting dessert.

  • 2 tablespoons unsalted butter
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large crisp apples (such as Honeycrisp, Granny Smith, or Fuji), peeled and diced
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon bourbon or dark rum (optional)

Instructions

  1. Wash, core, and peel the apples (optional). Dice them into small, 1/2-inch cubes and set aside in a bowl.
  2. In a medium saucepan, combine the granulated sugar and water. Place over medium heat and do not stir. Gently swirl the pan occasionally to ensure even heating.
  3. Watch closely as the sugar melts and turns a deep amber color (about 5-7 minutes). If crystals form on the sides, brush them down with a wet pastry brush.
  4. Once the sugar is amber, carefully add the heavy cream and butter. The mixture will bubble vigorously. Stir constantly until smooth and fully incorporated.
  5. Remove from heat and stir in the vanilla extract, salt, and bourbon (if using). Let the caramel cool for 2-3 minutes.
  6. In a separate bowl, beat the softened cream cheese until smooth and creamy, ensuring no lumps remain.
  7. Slowly pour the warm caramel into the beaten cream cheese while whisking constantly to prevent seizing. Whisk until the mixture is smooth.
  8. Gently fold the diced apples into the caramel-cream cheese mixture using a silicone spatula.
  9. Serve immediately for a warm dip, or refrigerate for 30 minutes for a firmer consistency. Garnish with flaky sea salt or cinnamon if desired.

Notes

Ensure cream cheese is fully softened to avoid lumps. Do not stir the sugar while melting to prevent crystallization. If the dip is too thick, add a teaspoon of warm milk or cream. If too thin, chill longer. Store leftovers in an airtight container in the refrigerator for up to 3 days.
