A creamy, spicy buffalo chicken dip balanced with tangy blue cheese crumbles, perfect for parties and casual gatherings. Ready in under 30 minutes, this dip is a crowd-pleaser with a rich, melty texture.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 300g)
  • 8 oz cream cheese, softened (225g)
  • 1/2 cup sour cream (120ml)
  • 1/2 cup buffalo hot sauce (120ml)
  • 1/2 cup blue cheese crumbles (75g)
  • 1 cup shredded cheddar cheese (100g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper
  • Optional garnish: chopped green onions or parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Let the cream cheese sit at room temperature for about 15 minutes to soften.
  3. In a mixing bowl, beat the softened cream cheese with sour cream until smooth and creamy, about 2-3 minutes with a hand mixer.
  4. Add the buffalo hot sauce and mix until fully incorporated and vibrant orange-red in color.
  5. Stir in garlic powder, onion powder, and black pepper until evenly distributed.
  6. Gently fold in shredded chicken, shredded cheddar cheese, and blue cheese crumbles, combining without overmixing.
  7. Spread the mixture evenly in an 8×8-inch (20×20 cm) baking dish and smooth the top with a spatula.
  8. Bake for 20-25 minutes until edges are bubbling and the top is slightly golden.
  9. Remove from oven and garnish with chopped green onions or parsley if desired.
  10. Serve warm with tortilla chips, celery sticks, or your favorite dippers.

Notes

Ensure cream cheese is softened to avoid lumps. For extra gooey top, sprinkle additional cheddar cheese in the last 5 minutes of baking. Let dip rest a few minutes before serving to thicken. Can be made in a slow cooker on low for 2 hours to keep warm. Adjust buffalo sauce to taste for heat level. Use rotisserie chicken for convenience.
