Cozy Small-Batch Chocolate Chip Cookies: No Chilling Needed

These small-batch chocolate chip cookies require no chilling and deliver warm, soft, and chewy cookies in under 30 minutes. Perfect for a cozy treat with simple pantry ingredients.

  • 4 tablespoons (57g) unsalted butter, melted
  • 3 tablespoons (38g) granulated sugar
  • 3 tablespoons (43g) light brown sugar, packed
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup + 1 tablespoon (75g) all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup (60g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium microwave-safe bowl, melt the butter in 20-second bursts until just melted. Let cool for a minute.
  3. Whisk in the granulated sugar and brown sugar until the mixture looks like wet sand and sugar is dissolved, about 30 seconds.
  4. Add the egg yolk and vanilla extract. Whisk vigorously until smooth, thick, and slightly lighter in color.
  5. In a separate small bowl, whisk together the flour, baking soda, and salt.
  6. Add the flour mixture to the butter mixture. Fold gently with a rubber spatula until no streaks of flour remain. Do not overmix.
  7. Fold in the chocolate chips, reserving a few to press on top of the dough balls.
  8. Scoop the dough into 6 equal balls (about 1.5 tablespoons each). Place on the prepared baking sheet, spacing 2 inches apart.
  9. Press a few reserved chocolate chips into the top of each dough ball.
  10. Bake for 9 to 11 minutes, until edges are golden brown and centers still look slightly soft and underdone.
  11. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack or serve warm.

Notes

Do not overmix the dough. Let the melted butter cool before adding the egg yolk to avoid scrambling. Use a light-colored baking sheet for even baking. Pull cookies when they look underdone; they will continue to set on the hot pan. For best results, bake one tray at a time.
