This isn’t just another hot chocolate mix you dump in a pot. This is a slow-simmered, deeply comforting drink that feels like a hug in a mug, perfect for holiday gatherings and cozy winter nights.

Ingredients

Scale
  • 6 cups whole milk (1.4 liters)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup unsweetened cocoa powder (50 grams)
  • 1/2 cup granulated sugar (100 grams)
  • 1/4 cup dark brown sugar, packed (50 grams)
  • 1/2 cup semi-sweet chocolate chips (90 grams)
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • Optional for serving: mini marshmallows, whipped cream, chocolate shavings, or a cinnamon stick

Instructions

  1. In a medium bowl, whisk together the unsweetened cocoa powder, granulated sugar, dark brown sugar, and salt until no lumps remain.
  2. Pour about 1 cup of the whole milk into the bowl with the dry ingredients. Whisk vigorously until you have a smooth, thick paste (a slurry).
  3. Pour the chocolate slurry into a 6-quart or larger slow cooker. Add the remaining 5 cups of whole milk and the heavy cream. Stir until uniform in color.
  4. Sprinkle the semi-sweet chocolate chips over the top of the milk mixture without stirring. Add the vanilla extract.
  5. Cover and cook on LOW for 2 to 3 hours, until the milk is steaming hot and the chocolate chips are fully melted. Stir after about 1.5 hours.
  6. Once the chocolate chips are melted and the cocoa is hot, whisk vigorously until smooth and frothy. Taste and adjust sweetness if desired.
  7. Turn the slow cooker to the WARM setting to keep the cocoa hot for serving. Ladle into mugs and top with mini marshmallows or whipped cream.

Notes

Don’t rush the cooking time; low and slow allows flavors to meld. If your slow cooker runs hot, check after 1.5 hours to prevent scalding. For a frothy texture, use an immersion blender right before serving. Leftovers can be stored in the refrigerator for up to 5 days and reheated on the stovetop or microwave.
