  • 2 lbs boneless, skinless chicken breasts (about 34 medium breasts)
  • 16 oz cream cheese, softened to room temperature (two standard blocks)
  • 1 cup buffalo hot sauce (like Frank’s RedHot)
  • 1 packet ranch dressing mix (about 1 oz)
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 1/2 cup crumbled blue cheese (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of a 3-4 quart slow cooker.
  2. Cut the softened cream cheese into 1-inch cubes and scatter over the chicken.
  3. Pour the buffalo hot sauce evenly over the chicken and cream cheese. Stir gently to coat.
  4. Sprinkle the ranch dressing mix over the top.
  5. Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the chicken is tender and shreds easily.
  6. About 30 minutes before serving, shred the chicken in the slow cooker using two forks or a hand mixer on low speed.
  7. Stir in the shredded cheddar cheese and crumbled blue cheese (if using) until melted and combined.
  8. Turn the slow cooker to WARM and let the dip rest for 10 minutes to thicken.
  9. Garnish with sliced green onions and serve warm from the slow cooker.

Notes

For best texture, use room temperature cream cheese and shred your own cheddar cheese from a block. Stir halfway through cooking for even consistency. If dip is too runny, cook with lid off for 15-20 minutes. If too thick, stir in a splash of milk or chicken broth.
