  • 1 shot of strong brewed coffee or espresso (about 2 ounces) or 1/2 cup strong brewed coffee
  • Whipped cream (optional, for topping)
  • Extra drizzle of salted caramel sauce (optional, for topping)
  • Pinch of pumpkin pie spice or cinnamon (optional, for topping)

Instructions

  1. Brew your coffee first. Make one shot of espresso or 1/2 cup of strong brewed coffee. Set it aside.
  2. In a small saucepan, combine the milk, pumpkin puree, and brown sugar. Whisk together over medium heat until the pumpkin is fully incorporated and there are no lumps, about 1 minute.
  3. Add the pumpkin pie spice and vanilla extract. Whisk again until everything is fragrant and steaming.
  4. Heat the mixture until it’s hot but not boiling, with tiny bubbles around the edges, about 3 to 4 minutes on medium heat. Stir occasionally.
  5. Pour the brewed coffee into your mug, leaving about 2 inches from the top.
  6. Pour the hot pumpkin milk mixture over the coffee, using a spoon to layer it nicely.
  7. Drizzle the salted caramel sauce over the top in a swirl pattern.
  8. Sprinkle the flaky sea salt over the caramel.
  9. Top with whipped cream, an extra drizzle of caramel, and a dusting of pumpkin pie spice or cinnamon (optional).
  10. Serve immediately.

Don’t overheat the milk; it should be steaming with tiny bubbles, not boiling. Whisk the pumpkin in completely to avoid lumps. Layer flavors intentionally: build the base first, then add spices, then vanilla. Salt the caramel on top, not the whole drink. Use room temperature ingredients if possible.
