A creamy, comforting overnight oats recipe with peanut butter and banana that comes together in just 5 minutes. Perfect for cozy mornings, cold weather, or days when you need a little extra comfort.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (any kind)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 medium ripe banana, mashed (about 120g)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, chopped peanuts, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana in a jar or small bowl until mostly smooth with a few small lumps.
  2. Add the peanut butter and mash together with the banana until it forms a thick, sticky paste.
  3. Pour in the milk and stir until the banana-peanut butter mixture is fully dissolved and smooth.
  4. Stir in the maple syrup (or honey) and vanilla extract. Taste and adjust sweetness if desired.
  5. Add the rolled oats and chia seeds. Stir until everything is well combined, making sure no dry oats remain at the bottom.
  6. Sprinkle in a pinch of salt and give one last stir.
  7. Seal the jar and refrigerate for at least 6 hours, preferably 8-12 hours overnight.
  8. In the morning, stir the oats. If too thick, add a splash of milk to loosen.
  9. Add desired toppings (sliced banana, extra peanut butter, cinnamon, chopped peanuts, etc.) and enjoy cold or microwave for 30-45 seconds for warm oats.

Notes

For best texture, use old-fashioned rolled oats. Steel-cut oats won’t soften enough; quick oats may become mushy. The chia seeds are key for a thick, pudding-like consistency. If you don’t have chia seeds, substitute with 1 tablespoon ground flaxseed or reduce milk by 2 tablespoons. The oats keep in the fridge for up to 5 days; texture softens over time. For a warm version, microwave for 30-45 seconds.
