  • 2 pounds beef chuck roast, cut into -inch cubes
  • ¼ cup all-purpose flour (or gluten-free flour/cornstarch for gluten-free option)
  • 3 tablespoons olive oil or vegetable oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 3 medium carrots, peeled and cut into chunks
  • 2 medium parsnips, peeled and cut into chunks
  • 2 medium sweet potatoes, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 4 cups beef broth (low-sodium preferred)
  • 1 bottle (12 oz) Guinness stout
  • 2 tablespoons tomato paste
  • 3 sprigs fresh thyme or 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prep your ingredients: Cut beef into 1½-inch cubes. Peel and chop carrots, parsnips, sweet potatoes, and celery into 1 to 1½-inch chunks. Dice onion and mince garlic. (About 15 minutes)
  2. Coat the beef: Toss beef cubes in flour until lightly coated, shaking off excess.
  3. Brown the beef: Heat olive oil in a Dutch oven over medium-high heat. Brown beef in batches for 4-5 minutes per batch. Transfer browned beef to a plate.
  4. Sauté aromatics: In the same pot, cook diced onion for about 5 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  5. Add tomato paste: Stir in tomato paste and cook for 2 minutes.
  6. Deglaze with Guinness: Pour in the Guinness stout and scrape up browned bits from the bottom.
  7. Add broth and herbs: Return beef to pot. Add beef broth, thyme sprigs, and bay leaves. Season with salt and pepper.
  8. Simmer stew: Bring to a boil, reduce heat to low, cover, and simmer gently for 1½ hours, stirring occasionally. Add more broth or water if too thick.
  9. Add root vegetables: Stir in carrots, parsnips, sweet potatoes, and celery. Cover and simmer for another 30-40 minutes until vegetables are tender but not mushy.
  10. Final seasoning and garnish: Remove thyme sprigs and bay leaves. Adjust salt and pepper. Sprinkle chopped parsley before serving.

Notes

For gluten-free, substitute all-purpose flour with cornstarch or gluten-free flour blend. To thicken stew if watery, mix 1 tablespoon flour or cornstarch with cold water and stir in, then simmer a few more minutes. Let stew rest covered off-heat for 15 minutes before serving to enhance flavors. Browning beef well is key for flavor. Add sweet potatoes later to avoid mushiness. Optional splash of balsamic vinegar near the end adds a nice tang.
