Ingredients

Scale
  • 1 ½ pounds fresh green beans, trimmed and cut into 2-inch pieces
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, thinly sliced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 ½ cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ teaspoon salt, plus more for blanching water
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon freshly grated nutmeg
  • 4 large shallots, thinly sliced into rings (about 1 ½ cups)
  • ½ cup all-purpose flour (for shallots)
  • ½ teaspoon salt (for shallots)
  • ¼ teaspoon black pepper (for shallots)
  • Vegetable or canola oil, for frying (about 1 ½ cups)

Instructions

  1. Bring a large pot of salted water to a boil. Add green beans and cook for exactly 3 minutes. Transfer to an ice water bath to stop cooking. Drain and set aside.
  2. In a shallow bowl, whisk together ½ cup flour, ½ teaspoon salt, and ¼ teaspoon pepper. Toss shallot rings in the flour mixture until coated. Shake off excess.
  3. Heat about ½ inch of oil in a small saucepan over medium heat. Fry shallots in batches for 2-3 minutes until golden brown. Transfer to paper towels and sprinkle with a pinch of salt.
  4. In a large skillet, melt 2 tablespoons butter over medium heat. Add mushrooms and cook for 5-7 minutes until browned. Add garlic and cook 30 seconds.
  5. Sprinkle 3 tablespoons flour over mushrooms and stir for 1 minute. Slowly whisk in chicken broth, then heavy cream, ½ teaspoon salt, ¼ teaspoon pepper, garlic powder, and nutmeg. Simmer for 2-3 minutes until thickened.
  6. Preheat oven to 375°F. Add blanched green beans to the sauce and stir to coat. Transfer to a greased 9×13-inch baking dish.
  7. Bake uncovered for 20 minutes. Remove from oven, top with crispy shallots, and bake for another 5 minutes. Let rest 5 minutes before serving.

Notes

Don’t over-blanch the beans—3 minutes is perfect. Dry shallots thoroughly before coating in flour to ensure even frying. Make shallots up to 2 days ahead and store in an airtight container. Let casserole rest 5 minutes before serving to allow sauce to set. Double the shallots for extra crunch.
