  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups chopped peppermint bark

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. Chop the peppermint bark into small pieces, about the size of a chocolate chip.
  3. In a large mixing bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract and mix until combined.
  5. In a medium bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  7. Fold in the chocolate chips and chopped peppermint bark until evenly distributed.
  8. Scoop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Optional: Sprinkle crushed candy canes on top of each dough ball.
  10. Bake for 9-11 minutes, until edges are golden brown and centers look slightly underdone.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  12. Repeat with remaining dough, ensuring baking sheets are cool before adding new dough.

Notes

Chill the dough for 30 minutes to 1 hour for thicker, chewier cookies. Use an oven thermometer to ensure accurate temperature. Don’t overbake; cookies should look slightly underdone when removed from the oven. For best results, use peppermint bark instead of crushed candy canes.
