This easy, 10-minute Halloween punch combines apple cider, pineapple juice, and ginger ale with creepy lychee ‘eyeballs’ for a spooky, crowd-pleasing party drink. It’s the perfect balance of sweet, tart, and fizzy, and can be made with or without alcohol.

Ingredients

Scale
  • 4 cups (960 ml) apple cider
  • 2 cups (480 ml) pineapple juice
  • 3 cups (720 ml) ginger ale
  • 1 cup (240 ml) orange juice
  • 2 tablespoons (30 ml) lemon juice
  • 2 tablespoons (30 ml) honey or maple syrup (optional)
  • 3–4 cinnamon sticks
  • 2–3 star anise pods
  • 1 cup (120 g) fresh cranberries
  • 1 can frozen lychee fruits, drained
  • 1 cup fresh blueberries (for stuffing lychees)
  • 2–3 apples, thinly sliced
  • Ice ring or ice cubes (made with apple cider and cranberries)
  • 1–2 cups (240–480 ml) dark rum or bourbon (optional, for spiked version)

Instructions

  1. Make the Ice Ring (4 hours ahead or overnight): Fill a bundt pan or ring mold halfway with apple cider. Add fresh cranberries, a few apple slices, and a cinnamon stick. Freeze until solid, then add more cider to fill the rest of the mold. Freeze completely.
  2. Prepare the Lychee Eyeballs (15 minutes): Drain the canned lychee fruits. Carefully stuff one blueberry into the center hole of each lychee. Set aside in a small bowl.
  3. Mix the Juice Base (5 minutes): In a large pitcher, combine apple cider, pineapple juice, orange juice, and lemon juice. Stir well. If using honey or maple syrup, add and stir until dissolved. Taste and adjust.
  4. Add the Spices (2 minutes): Drop cinnamon sticks and star anise into the pitcher. Let steep for at least 30 minutes.
  5. Assemble the Punch Bowl (5 minutes): Place the ice ring in the bottom of the punch bowl. Pour the juice mixture over it. Gently add the ginger ale, pouring slowly down the side to preserve fizz. Stir once gently.
  6. Add the Garnishes (5 minutes): Float the lychee eyeballs on top. Scatter fresh cranberries and apple slices around the bowl. Add extra cinnamon sticks for visual appeal.
  7. Serve Immediately: Place the ladle in the bowl and let guests serve themselves. Best within the first hour.
  8. For the Spiked Version: Add rum or bourbon to the pitcher along with the juices. Stir well before pouring into the punch bowl. Start with 1 cup and add more to taste.

Notes

Don’t skip the ice ring—it keeps the punch cold without diluting it. Add ginger ale last to preserve fizz. Let spices steep for at least 30 minutes for best flavor. Lychee eyeballs can be made up to 24 hours ahead. The juice base (without ginger ale) can be made 2 days ahead. The ice ring can be made weeks in advance.
