  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons (85 grams) unsalted butter, melted and slightly cooled
  • 3/4 cup (180 ml) milk (whole milk preferred, dairy-free alternatives like almond or oat milk can be used)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel the peaches using a paring knife or vegetable peeler. Slice them into roughly 1/2-inch thick wedges.
  3. In a large bowl, toss the sliced peaches with 1/2 cup (100 grams) of granulated sugar, the lemon juice, and cinnamon. Let it sit for about 10 minutes.
  4. In a medium bowl, whisk together the flour, baking powder, salt, and remaining 1/4 cup (50 grams) sugar.
  5. Pour the melted butter into the dry ingredients, then add the milk and vanilla extract. Stir until just combined.
  6. Pour the peach mixture, along with all the juices, into your skillet. Spread the batter evenly over the top.
  7. Place the skillet in the oven and bake for 35-40 minutes until the topping is golden brown and cooked through, and the peaches are bubbling around the edges.
  8. Let the cobbler rest for about 10 minutes before serving to allow the juices to thicken.

Notes

If topping browns too quickly, loosely cover skillet with foil halfway through baking. For extra juicy peaches, sprinkle a tablespoon of cornstarch mixed with sugar before baking to thicken filling. The cobbler can be prepared ahead by mixing peaches with sugar and spices and refrigerating up to 4 hours before adding batter and baking.
