  • 810 ounce wheel of brie cheese
  • 46 ounces thinly sliced prosciutto
  • 1 cup spiced nuts (pecans and walnuts)
  • Honey for drizzling
  • 8 ounces crackers (mix of buttery rounds, water crackers, and whole grain)
  • 1/2 cup dried figs or dates (Medjool dates recommended)
  • Fresh rosemary or thyme sprigs for garnish
  • Flaky sea salt (Maldon salt recommended)

Instructions

  1. Take the brie out of the fridge 30-45 minutes before serving to bring to room temperature.
  2. If making spiced nuts, preheat oven to 350°F. Toss 1 cup pecans and walnuts with 1 tablespoon melted butter, 1 teaspoon cinnamon, 1 tablespoon maple syrup, and a pinch of salt. Spread on a baking sheet and roast for 8-10 minutes, stirring once halfway through. Let cool.
  3. Wash and slice Honeycrisp apples just before serving. Core and slice into thin wedges (8-10 slices per apple). Pat dry with paper towels to remove excess moisture.
  4. Arrange the board: place brie slightly off-center. Add small bowls of nuts and dried fruit as anchors.
  5. Drape prosciutto slices in loose folds around the board, creating ribbons by folding each slice in half lengthwise and twisting gently.
  6. Fan out apple slices in overlapping rows or clusters around the board.
  7. Fill gaps with crackers, arranging in small clusters or lines, mixing varieties.
  8. Drizzle brie with honey (about 1 tablespoon). Sprinkle flaky sea salt over the whole board, focusing on apples and brie.
  9. Garnish with fresh rosemary or thyme sprigs.
  10. Serve immediately with small plates, napkins, and a cheese knife.
