  • 8 oz (226g) cream cheese, softened
  • 2 cans (15 oz / 425g each) white beans (Great Northern or cannellini), drained and rinsed
  • 2 cans (4 oz / 113g each) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups (960 ml) low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • 1 jalapeño, sliced (optional)
  • Juice of 1 lime

Instructions

  1. Prep the aromatics: Dice the onion and mince the garlic.
  2. Layer the crockpot: Place chicken breasts in the bottom. Sprinkle diced onion and minced garlic over the top.
  3. Add beans and chiles: Drain and rinse white beans, then add to pot. Add diced green chiles on top.
  4. Season: Sprinkle cumin, oregano, chili powder, and a generous pinch of salt and pepper over everything.
  5. Pour in broth: Pour chicken broth over the top, mostly covering the chicken.
  6. Cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. Shred chicken: After cooking, shred chicken directly in the pot using two forks.
  8. Add cream cheese: Cut softened cream cheese into cubes, stir into hot chili until fully melted and incorporated (about 2-3 minutes).
  9. Finish with lime: Squeeze lime juice into pot and stir.
  10. Taste and adjust: Adjust salt, pepper, or heat as desired. Garnish with cilantro and sliced jalapeño if using.
