A creamy, fizzy, and fruity holiday punch made with rainbow sherbet, pineapple juice, ginger ale, and lemon-lime soda. Ready in just 5 minutes, it’s the perfect crowd-pleaser for any festive gathering.

Ingredients

Scale
  • 1.5 quarts (about 6 cups) rainbow sherbet
  • 4 cups (32 ounces) pineapple juice, chilled
  • 4 cups (32 ounces) ginger ale, chilled
  • 2 cups (16 ounces) lemon-lime soda (such as Sprite or 7Up), chilled
  • Optional garnishes: fresh mint leaves, maraschino cherries, orange slices, fresh cranberries

Instructions

  1. Chill the pineapple juice, ginger ale, and lemon-lime soda in the refrigerator for at least 30 minutes before serving.
  2. Let the rainbow sherbet sit at room temperature for 5-10 minutes to soften slightly for easier scooping.
  3. Just before serving, pour the chilled pineapple juice, ginger ale, and lemon-lime soda into a large punch bowl. Stir gently to combine.
  4. Using an ice cream scoop, add 6-8 large scoops of rainbow sherbet to the punch bowl. Do not stir; let them float on top.
  5. Add optional garnishes such as fresh mint leaves, cranberries, or orange slices.
  6. Serve immediately with a ladle, ensuring each cup gets some melted sherbet mixture.

Notes

For best results, serve within the first hour. To keep punch cold without diluting, freeze a ring of pineapple juice and float it in the bowl. For an adult version, add 1-2 cups of vodka or white rum. Leftovers can be stored in the refrigerator for up to 24 hours; texture will change as sherbet melts and carbonation fades.
