This easy homemade loaf combines the cozy flavors of a classic apple fritter with the simplicity of a quick bread. It features a tender, moist crumb studded with soft apple chunks and a crunchy cinnamon-sugar crust, all topped with a vanilla glaze.

  • ½ cup (100g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon

  • 2 large eggs, room temperature
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • ⅓ cup (80ml) milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 1 ½ cups (about 2 medium) apples, peeled, cored, and diced into ½-inch cubes (Honeycrisp, Granny Smith, or Braeburn)
  • For the cinnamon sugar coating: ¼ cup (50g) granulated sugar, 1 tablespoon ground cinnamon, 2 tablespoons (28g) unsalted butter, melted
  • For the glaze (optional): 1 cup (120g) powdered sugar, 2-3 tablespoons (30-45ml) milk, ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. In a small bowl, toss diced apples with 1 tablespoon of the flour (from the 1 ½ cups) and ½ teaspoon cinnamon. Set aside.
  3. In a large bowl, whisk together remaining flour, granulated sugar, brown sugar, baking powder, remaining 1 teaspoon cinnamon, and salt.
  4. In a separate bowl, whisk eggs, then add melted butter, milk, and vanilla. Whisk until frothy.
  5. Pour wet ingredients into dry ingredients and fold with a rubber spatula until just combined (do not overmix).
  6. Gently fold in the floured apple pieces until evenly distributed.
  7. Pour batter into prepared pan and spread evenly. Bake for 50-60 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Tent with foil if browning too quickly.
  8. Cool in pan on a wire rack for 15 minutes. Use parchment to lift loaf out and place on rack.
  9. While still warm, brush top and sides with melted butter. Mix ¼ cup sugar and 1 tablespoon cinnamon; sprinkle generously over buttered loaf.
  10. For glaze: whisk powdered sugar, 2 tablespoons milk, and vanilla until smooth. Add more milk if needed. Drizzle over cooled loaf.
  11. Let glaze set for 10 minutes before slicing with a serrated knife.

Notes

For best results, use room temperature ingredients. Coat apples in flour and cinnamon to prevent sinking. Do not overmix batter. Cool completely before glazing. Store in an airtight container at room temperature for up to 3 days. Freezes well (unglazed) for up to 3 months.
