  • 2 teaspoons apple pie spice
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 cup rolled oats (old-fashioned)
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine sliced apples, granulated sugar, apple pie spice, lemon juice, and cornstarch. Toss to coat evenly and let sit for 10 minutes.
  3. Transfer the apple mixture to a 9×13 inch baking dish and spread evenly.
  4. In a separate bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt.
  5. Cut in the cold, cubed butter using a fork or pastry cutter until the mixture resembles coarse crumbs with some larger clumps.
  6. Sprinkle the oat streusel evenly over the apples and press down gently.
  7. Bake for 45-50 minutes until the topping is golden brown and apples are tender.
  8. Let cool for at least 10 minutes before serving to allow juices to thicken.

Notes

Use cold butter for the topping to ensure a crumbly texture. Do not skip the cornstarch as it thickens the apple juices. Let the crisp cool for 10 minutes before serving to prevent a soupy consistency. Can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
