  • 3 cups whole milk
  • 2 garlic cloves, minced
  • ½ teaspoon freshly grated nutmeg

  • 12 no-boil lasagna noodles
  • 15 ounces whole milk ricotta cheese
  • 1 large egg
  • 8 ounces fresh mozzarella cheese, shredded or torn
  • 1 cup grated Parmesan cheese
  • Extra fresh sage leaves for topping

Instructions

  1. Preheat oven to 400°F (200°C). Place cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat and spread in a single layer. Roast for 25-30 minutes, flipping halfway, until tender and caramelized. Let cool slightly, then mash with a fork. Set aside.
  2. While squash roasts, make the sage brown butter sauce. In a medium saucepan, melt butter over medium heat. Add fresh sage leaves and fry for about 2 minutes until fragrant and slightly crispy. When butter turns golden brown and smells nutty, remove sage leaves and set aside for garnish. Reduce heat to medium-low, whisk in flour, and cook for 1 minute.   4. Preheat oven to 375°F (190°C). Spread a thin layer of brown butter sauce (about ½ cup) on the bottom of a 9×13-inch baking dish. Place a layer of no-boil lasagna noodles on top. Spread half of the mashed roasted squash over the noodles. Dollop half of the ricotta mixture over the squash and spread gently. Sprinkle with one-third of the mozzarella and a little Parmesan.
