Ingredients

Scale
  • 20–24 medium white or cremini mushrooms, stems removed
  • 1 tablespoon olive oil
  • 2 cups cooked shredded chicken
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch or blue cheese dressing
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup chopped green onions
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon melted butter
  • Fresh parsley or chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or foil.
  2. Gently wipe mushrooms clean with a damp paper towel. Twist off stems and use a small spoon to create a deeper cavity if needed. Brush caps lightly with olive oil and arrange on prepared baking sheet, cavity side up.
  3. In a large bowl, beat softened cream cheese with a fork until smooth. Add buffalo wing sauce and ranch dressing, stir until combined. Add shredded chicken, 3/4 cup cheddar cheese, crumbled blue cheese (if using), and half of the green onions. Mix until evenly distributed.
  4. Fill each mushroom cap generously with the buffalo chicken mixture, mounding slightly.
  5. Sprinkle remaining 1/4 cup cheddar cheese over stuffed mushrooms. In a small bowl, mix panko breadcrumbs with melted butter until coated. Sprinkle over cheese-topped mushrooms.
  6. Bake for 18-22 minutes until mushrooms are tender, filling is hot and bubbly, and panko is golden brown.
  7. Let cool on baking sheet for 5 minutes before transferring to a serving platter. Sprinkle with remaining green onions and fresh parsley or chives. Serve warm.

Notes

For best results, use room temperature cream cheese. Don’t overcrowd the pan. For make-ahead, assemble up to 24 hours in advance, add panko topping just before baking, and add 5-7 minutes to baking time. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
