Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • ½ cup pure maple syrup (Grade A dark amber preferred)
  • ¾ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 cup chopped pecans, toasted

Instructions

  1. Brown the butter: Place the butter in a light-colored saucepan over medium heat. Swirl occasionally as it melts. It will foam, then the foam subsides, and brown specks form at the bottom (about 5-7 minutes). When it smells nutty and turns amber, remove from heat and pour into a heatproof bowl immediately.
  2. Cool the brown butter: Let it sit for 10-15 minutes until warm but not hot.
  3. Mix the wet ingredients: Whisk the cooled brown butter with maple syrup, brown sugar, and granulated sugar until smooth. Add the egg and vanilla, whisk vigorously for about 30 seconds until glossy and slightly lighter.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt until no clumps remain.
  5. Bring it together: Pour dry ingredients into wet mixture. Fold gently with a spatula until just combined, with a few streaks of flour remaining.
  6. Add the pecans: Fold in toasted pecans until evenly distributed. Dough will be thick and slightly sticky.
  7. Chill the dough: Cover and refrigerate for at least 30 minutes (or 15 minutes in the freezer if in a rush).
  8. Preheat and prepare: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  9. Scoop and shape: Use a 1.5-tablespoon cookie scoop to portion dough into balls. Place 2 inches apart on prepared sheets.
  10. Bake: Bake for 10-12 minutes, rotating the pan halfway through. Edges should be golden brown, centers slightly underdone and puffy.
  11. Cool completely: Let cookies rest on baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

Brown butter can burn quickly; watch closely. Chill dough to prevent spreading. Cookies taste even better the next day. For best results, use room temperature ingredients.
