A quick and easy taco soup made with ground beef, beans, corn, and a secret blend of ranch and taco seasonings. Ready in just 30 minutes, it’s the perfect comforting weeknight dinner.

  • 1 pound ground beef (80/20 works well; you can also use ground turkey or chicken)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) diced tomatoes (fire-roasted adds a lovely smoky note)
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 4 cups beef broth (low-sodium is best)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Brown the beef. Place your Dutch oven or large pot over medium-high heat and add the olive oil. Once it’s shimmering, add the ground beef. Break it up with your wooden spoon and cook until it’s browned all the way through, about 5 to 7 minutes. Don’t drain all the fat—leave about a tablespoon in the pot for flavor.
  2. Sauté the aromatics. Add the diced onion to the pot with the beef. Cook for 3 to 4 minutes until the onion is soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the seasonings. Sprinkle the ranch seasoning mix and taco seasoning mix over the meat and onions. Stir everything together and let it cook for about a minute to toast the spices.
  4. Pour in the liquids. Add the beef broth, diced tomatoes (with their juices), and tomato sauce. Stir well, scraping the bottom of the pot with your wooden spoon to lift up all those browned bits.
  5. Add the beans and corn. Drain and rinse the black beans, then add them to the pot. Add the drained corn as well. Stir everything together until it’s well combined.
  6. Simmer. Bring the soup to a gentle boil, then reduce the heat to low. Let it simmer uncovered for 15 to 20 minutes. The soup will thicken slightly as it simmers. If it seems too thick, add a little more broth or water.
  7. Taste and adjust. Give the soup a taste. Add salt and pepper if needed, but remember that the seasoning packets already contain salt. I usually add just a pinch of black pepper and call it done.
  8. Serve. Ladle the soup into bowls and top with your favorite toppings.

Notes

Don’t skip browning the meat properly for deep flavor. Toast the seasoning for a minute before adding liquid. Watch your salt—both seasoning packets contain salt. Let the soup rest for 10 minutes before serving for better flavor melding. This soup tastes even better the next day.
