  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 4 cups beef broth (low-sodium)
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, lime wedges

Instructions

  1. Brown the beef: Place a large pot over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, for 5 to 6 minutes until no longer pink. Drain excess fat if needed, leaving a little for flavor.
  2. Sauté the aromatics: Add the diced onion to the pot with the beef. Cook for 3 to 4 minutes, stirring occasionally, until the onion softens and turns translucent. Add the minced garlic and cook for 30 seconds more until fragrant.
  3. Add the seasoning: Sprinkle the taco seasoning, chili powder, and cumin over the beef and onion mixture. Stir well to coat evenly. Let it cook for 1 minute to bloom the spices.
  4. Pour in the liquids: Add both cans of diced tomatoes (with their juices) and the beef broth. Stir everything together, scraping up any browned bits from the bottom of the pot.
