  • 4 cups fresh broccoli florets, chopped into bite-sized pieces
  • 1 cup shredded or finely diced carrots
  • 2 cups freshly shredded sharp cheddar cheese (from a block)
  • 1 cup whole milk (or 2%)
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon freshly grated nutmeg

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 4-5 minutes until translucent. Add the minced garlic and cook for 1 minute more.
  2. Pour in the broth and add the diced russet potato. Bring to a boil, then reduce heat and simmer for 12-15 minutes until the potato is fork-tender.
  3. Turn off the heat. Use an immersion blender to blend the soup directly in the pot until completely smooth. (If using a regular blender, let cool 5 minutes, then blend in batches.)
  4. Stir in the broccoli florets and shredded carrots. Return to medium heat and simmer for 8-10 minutes, until broccoli is tender but still bright green.
