These candied brown sugar bacon wrapped little smokies are the ultimate sweet and savory appetizer. Little smoked sausages are wrapped in bacon, coated in brown sugar and a hint of cayenne, then baked until caramelized and irresistible.

  • 1 (14-16 oz) package little smokies
  • 1 lb thin-cut bacon
  • 1 cup packed brown sugar
  • 1/4 teaspoon cayenne pepper (optional)
  • Toothpicks

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with aluminum foil and place a wire rack on top if available.
  2. Pat the little smokies dry with paper towels to remove excess moisture.
  3. Cut each bacon strip in half crosswise.
  4. Wrap each little smokie with a half strip of bacon, overlapping the ends slightly. Secure with a toothpick through the overlap.
  5. In a medium bowl, combine brown sugar and cayenne pepper (if using). Stir to break up clumps.
  6. Roll each bacon-wrapped little smokie in the brown sugar mixture, pressing gently to adhere. Place on the prepared wire rack or baking sheet, leaving space between each.
  7. Bake for 35-40 minutes, rotating the pan at the 20-minute mark. If sugar browns too quickly, loosely tent with foil.
  8. Remove from oven and let rest for 5 minutes to allow the caramelized sugar to set.
  9. Transfer to a serving platter using tongs. Remove toothpicks if desired, or leave them in for easy grabbing. Serve warm.

Notes

For best results, use thin-cut bacon and pat the little smokies dry before wrapping. If you don’t have a wire rack, place the wrapped smokies directly on the foil-lined baking sheet and flip halfway through cooking. To keep warm for a party, transfer to a slow cooker set to low after baking. Double the batch for larger gatherings.
