  • 3 tablespoons mayonnaise (for every 6 eggs; Duke’s or Hellmann’s recommended)
  • 1 teaspoon yellow mustard (or Dijon for sharper flavor)
  • 1 teaspoon white vinegar
  • ¼ teaspoon fine sea salt (or to taste)
  • 1 pinch freshly ground black pepper
  • Paprika for garnish (optional)
  • 1 can (about 6 ounces) whole black olives (large, firm olives)

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan, cover with cold water by 1 inch. Bring to a rolling boil over high heat, then cover, turn off heat, and let sit for exactly 12 minutes.
  2. Ice bath: While eggs sit, fill a large bowl with ice and cold water. Transfer eggs to ice bath using a slotted spoon and chill for at least 10 minutes to stop cooking and ease peeling.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell all over, roll between palms to loosen, then peel starting from the wider end. Rinse under cold water to remove shell fragments.
  4. Slice the eggs: Using a sharp knife, slice each egg in half lengthwise. Wipe knife clean between cuts. Gently pop yolks into a mixing bowl. Arrange white halves on a serving platter or egg tray.
  5. Make the filling: Add mayonnaise, mustard, vinegar, salt, and pepper to the bowl with yolks. Mash with a fork until smooth and creamy. Taste and adjust seasoning as needed.
  6. Pipe the filling: Spoon yolk mixture into a piping bag fitted with a star tip (e.g., Wilton 1M). Pipe a generous swirl into each egg white half, starting from the center and working outward in a circular motion, creating a mound above the edge.
  7. Prepare the olives: Drain black olives and pat dry with a paper towel. Using a sharp paring knife, slice olives into thin rounds, about ⅛ inch thick. You need one slice per egg half.
  8. Create the spider web: Place one olive slice on top of the piped filling, slightly off-center. Using the tip of a small knife or a toothpick, make a small cut from the edge of the olive slice outward toward the edge of the egg white. Repeat at evenly spaced intervals around the olive slice (4-5 cuts). Gently press the cut edges outward with the toothpick to open the web.
  9. Garnish and chill: Sprinkle a tiny pinch of paprika over the eggs if desired. Refrigerate for at least 30 minutes before serving to set the filling and meld flavors.

Notes

Use eggs at least a week old for easier peeling. Do not overfill the piping bag; fill halfway and refill as needed. For the spider web, 4-5 evenly spaced cuts around the olive slice work best; too many cuts may cause the olive to fall apart. Boil and peel eggs the night before for convenience; store peeled eggs in cold water in the fridge. Assemble and decorate about an hour before serving. For dairy-free, use vegan mayonnaise. For a gluten-free version, ensure mustard and mayonnaise are gluten-free. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; do not freeze.
