Ingredients

Scale
  • 2 medium carrots, peeled and cut into 1-inch chunks
  • 2 medium parsnips, peeled and cut into 1-inch chunks
  • 1 large sweet potato, peeled and cut into 1-inch cubes
  • 1 medium red onion, cut into 1-inch wedges
  • 2 medium red potatoes, unpeeled, cut into 1-inch cubes
  • 1 large beet, peeled and cut into 1-inch cubes (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh rosemary, finely chopped (or 2 teaspoons dried rosemary, crushed)
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • Optional: 1 tablespoon balsamic vinegar (added in last 10 minutes of roasting)

Instructions

  1. Preheat your oven to 425°F (220°C). Place your baking sheet in the oven while it preheats to get it hot.
  2. Prepare all your vegetables: peel carrots, parsnips, sweet potato, and beet. Leave red potatoes unpeeled. Cut everything into roughly 1-inch cubes or chunks.
  3. Mince the garlic and chop the rosemary.
  4. In a large mixing bowl, combine all the chopped vegetables, olive oil, minced garlic, chopped rosemary, salt, and pepper. Toss until every piece is evenly coated.
  5. Carefully remove the hot baking sheet from the oven. Spread the vegetables into a single layer on the sheet. Do not overcrowd the pan.
  6. Roast for 25 minutes without disturbing.
  7. After 25 minutes, remove the pan from the oven and flip the vegetables using a spatula. Spread them back into a single layer and return to the oven.
  8. Roast for another 15 to 20 minutes, or until the vegetables are tender when pierced with a fork and deeply caramelized on the edges.
  9. Optional: If using balsamic vinegar, drizzle it over the vegetables during the last 10 minutes of roasting.
  10. Remove from the oven and let rest on the pan for 5 minutes. Transfer to a serving platter, garnish with fresh rosemary sprigs if desired, and serve warm.

Notes

Cut vegetables to uniform size for even cooking. Preheat the baking sheet for better caramelization. Do not overcrowd the pan to avoid steaming. For best results, reheat leftovers in a 400°F oven for 5-10 minutes. Not recommended for freezing.
