Ingredients

Scale
  • 1 cup (226g) unsalted butter
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (160g) pure maple syrup
  • 2 large eggs, lightly beaten
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 2 cups (220g) pecan halves
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides. Lightly spray the parchment with non-stick spray.
  2. In a small saucepan over low heat, melt 1 cup of unsalted butter. Remove from heat and let cool for 5 minutes.
  3. In a large bowl, whisk the melted butter with 2 cups of granulated sugar until combined. Add the 4 eggs, one at a time, whisking well after each. Stir in the tablespoon of vanilla extract.
  4. Sift the flour, cocoa powder, and salt into the wet mixture. Fold gently with a rubber spatula until just combined. Pour the batter into the prepared pan and spread evenly.
  5. In a medium bowl, whisk together the melted 1/2 cup butter, brown sugar, maple syrup, 2 beaten eggs, bourbon, and vanilla until smooth. Fold in the pecan halves and a pinch of salt.
  6. Carefully pour the pecan topping over the brownie batter. Gently spread the pecans into an even layer without stirring into the brownies.
  7. Bake on the middle rack for 40 to 45 minutes, until the edges are set and the center has a slight jiggle. A toothpick inserted into the center should come out with moist crumbs.
  8. Cool the pan on a wire rack for at least 2 hours to allow the topping to set.
  9. Use the parchment sling to lift the brownies out. Slice into squares with a sharp knife, wiping the blade clean between cuts.

Notes

For clean slices, let brownies cool completely (at least 2 hours) and chill in the fridge for 30 minutes before slicing. Use a sharp knife and wipe clean between cuts. Leftovers can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
