  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 3 medium russet potatoes, peeled and cubed (about 3 cups)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 8 oz cream cheese, softened and cubed
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 2 tablespoons all-purpose flour
  • Crispy bacon bits (about 6 slices, cooked and crumbled)
  • Dill pickle slices or chopped pickles
  • Diced red onion
  • Chopped fresh parsley or chives
  • Extra shredded cheddar

Instructions

  1. Brown the beef and aromatics: Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned (6-8 minutes). Drain excess fat, leaving about 1 tablespoon. Add diced onion, carrots, and celery; cook 3-4 minutes until onion is translucent. Stir in minced garlic and cook 30 seconds until fragrant.
  2. Build the soup base: Transfer beef and vegetable mixture to a 6-quart slow cooker. Add beef broth, diced tomatoes (with juices), cubed potatoes, Worcestershire sauce, smoked paprika, salt, and pepper. Stir to combine.
  3. Slow cook: Cover and cook on low for 5-6 hours or on high for 3-4 hours, until potatoes are fork-tender.
  4. Create the creamy finish: In a small bowl, whisk together flour and milk until smooth. Pour into slow cooker and stir. Add softened cream cheese in chunks and stir until melted. Cook uncovered for 15 minutes, stirring occasionally, until soup thickens.
  5. Add cheese and serve: Turn slow cooker to warm or low. Gradually add shredded cheddar cheese, stirring constantly until fully melted. Taste and adjust seasoning. Ladle into bowls and top with bacon, pickles, red onion, herbs, and extra cheese.

Notes

For best results, shred cheese from a block; pre-shredded cheese may cause graininess. Add dairy during the last 30 minutes to prevent curdling. If soup is too thick, stir in a splash of warm milk or broth. If too thin, cook uncovered for 10-15 minutes more.
