  • ½ cup beer (light lager or pilsner)
  • 2 cups shredded sharp cheddar cheese
  • ½ teaspoon mustard powder
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, sugar, and yeast. Stir and let sit for about 5 minutes until foamy.
  2. Make the dough: Add flour, salt, and melted butter to the yeast mixture. Stir until a shaggy dough forms. Knead on a floured surface for about 5 minutes until smooth and slightly tacky.
  3. First rise: Place dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm spot for about 30 minutes until doubled in size.
  4. Preheat and prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Bring 10 cups of water to a boil in a large pot, then carefully add baking soda (it will bubble up).
  5. Shape the bites: Punch down the dough and divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch bite-sized pieces.
