Best Grilled Peach & Burrata Salad

A stunning summer salad featuring warm, caramelized grilled peaches paired with cool, creamy burrata cheese, peppery arugula, and a sweet-tangy balsamic honey dressing. It comes together in under 20 minutes and is perfect for impressing guests or enjoying a light, flavorful meal.

  • 4 medium ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese (about 2 small balls), at room temperature
  • 5 ounces arugula (about 5 cups)
  • 1/4 cup fresh basil leaves, loosely packed, plus more for garnish
  • 2 tablespoons balsamic glaze
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon honey
  • 1/2 teaspoon flaky sea salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • Optional: 1/4 cup toasted pine nuts or chopped pecans for crunch
  • Optional: red pepper flakes for heat

Instructions

  1. Preheat your grill or grill pan to medium-high heat. Clean the grates and lightly oil them.
  2. Wash and dry the peaches. Cut them in half along the natural seam, twist to separate, and remove the pit. Brush the cut sides lightly with olive oil.
  3. In a small bowl, whisk together the balsamic glaze, 2 tablespoons of olive oil, honey, a pinch of salt, and a few grinds of black pepper. Set aside.
  4. Place the peaches cut-side down on the hot grill. Cook undisturbed for 3-4 minutes until grill marks form and edges caramelize. Flip and cook for another 2 minutes on the skin side. Remove and let cool for 1-2 minutes.
  5. Arrange the arugula on a large serving platter. Drizzle with about half of the dressing and toss gently to coat.
  6. Nestle the grilled peach halves into the arugula, cut-side up. Tear the burrata into large pieces and place around the peaches.
  7. Drizzle the remaining dressing over the top. Sprinkle with fresh basil leaves, flaky sea salt, and black pepper. Add optional nuts or red pepper flakes if desired. Serve immediately.

Notes

Choose peaches that are ripe but firm—too soft and they’ll fall apart on the grill. Let the grilled peaches cool for just a minute or two before assembling to prevent the burrata from melting. The salad is best served immediately; if making ahead, grill peaches up to an hour in advance and store components separately.
