  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (50g) unsweetened cocoa powder (Dutch-process preferred)
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon espresso powder (optional)
  • 1/4 cup (1/2 stick, 57g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 3 tablespoons unsweetened cocoa powder
  • 23 tablespoons heavy cream or whole milk
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup white icing or melted white chocolate (for laces)

Instructions

  1. Preheat oven to 350°F (175°C). Place silicone mold on a baking sheet or grease mini muffin pan generously.
  2. In a medium saucepan over low heat, melt 1/2 cup unsalted butter. Remove from heat and let cool for 2 minutes.
  3. In a large bowl, whisk melted butter with 1 cup granulated sugar for 1 minute. Add eggs one at a time, whisking well after each. Whisk in 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together 1/2 cup cocoa powder, 1/2 cup flour, 1/4 teaspoon salt, and 1/2 teaspoon espresso powder (if using).
  5. Pour dry ingredients into wet ingredients. Fold with a rubber spatula until just combined. Do not overmix.
  6. Spoon batter into prepared molds or muffin cups, filling each about 3/4 full.
  7. Bake for 10-12 minutes, until edges are set and a toothpick inserted in center comes out with moist crumbs. Cool in mold on a wire rack for 10 minutes, then turn out onto rack to cool completely.
  8. For frosting: In a medium bowl, beat 1/4 cup softened butter until smooth. Add 1 cup powdered sugar, 3 tablespoons cocoa powder, and a pinch of salt. Beat on low until combined. Add 2 tablespoons heavy cream and 1/2 teaspoon vanilla. Beat on medium-high for 1-2 minutes until fluffy. Add more cream if needed.
  9. Transfer frosting to a piping bag with a small round tip. Pipe a small swirl onto each cooled brownie bite.
  10. Melt white icing or white chocolate. Transfer to a small piping bag or zip-top bag with a tiny corner snipped. Pipe two parallel lines down the center of each frosted brownie, then 3-4 perpendicular lines to form laces.
  11. Let frosting set for 15-20 minutes at room temperature or 10 minutes in the refrigerator before serving.

Do not overmix the batter to keep brownies fudgy. Use room temperature eggs for smooth batter. Check for doneness early to avoid overbaking. Cool completely before frosting.
