Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes, prick with a fork, and roast directly on oven rack or on a baking sheet for 45-60 minutes until very soft.
  2. Let sweet potatoes cool for 10-15 minutes, then slice in half, scoop flesh into a large bowl, and discard skins. You should have about 4 cups mashed.
  3. Add melted butter, heavy cream, brown sugar, beaten eggs, vanilla, cinnamon, nutmeg, and salt to the sweet potatoes. Mash until mostly smooth (or use an electric mixer for 30 seconds for a silky texture). Do not overmix.
  4. Spray a 9×13-inch baking dish with nonstick spray. Spread sweet potato mixture evenly in the dish.
  5. In a medium bowl, whisk together flour, brown sugar, chopped pecans, cinnamon, and salt. Pour melted butter over dry ingredients and stir with a fork until moistened and clumpy (like wet sand).
  6. Sprinkle streusel evenly over sweet potato filling. Do not press down. Bake at 350°F (175°C) for 30-35 minutes until bubbly and golden. Tent with foil if browning too quickly.
  7. Let casserole rest for 10-15 minutes before serving.

Notes

Roast sweet potatoes instead of boiling to avoid a watery filling. Use melted butter in the streusel for a stable crumble that doesn’t sink. Assemble without streusel up to 24 hours ahead; add streusel just before baking. For a nut-free version, replace pecans with rolled oats.
