Ingredients

Scale
  • 1/2 cup (100g) granulated sugar
  • 3 tablespoons (45g) unsalted butter, cut into pieces
  • 1/4 cup (60ml) heavy cream
  • 1 1/2 tablespoons white miso paste
  • 1/2 teaspoon vanilla extract
  • Pinch of flaky sea salt
  • 6 medium apples (about 2 lbs / 900g), peeled, cored, and sliced into 1/4-inch thick pieces
  • 2 tablespoons (30g) unsalted butter
  • 2 tablespoons (25g) light brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon all-purpose flour
  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (45g) old-fashioned rolled oats
  • 1/3 cup (65g) light brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113g or 1 stick) cold unsalted butter, cut into small cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Butter your 8×8-inch baking dish lightly.
  2. Make the miso caramel: In a medium saucepan over medium heat, cook 1/2 cup granulated sugar, stirring occasionally with a whisk, until it melts and turns a deep amber color (5-7 minutes). Remove from heat. Carefully whisk in 3 tablespoons butter, then slowly whisk in 1/4 cup heavy cream until smooth. Whisk in 1 1/2 tablespoons white miso paste and 1/2 teaspoon vanilla extract until dissolved. Set aside to cool slightly.
  3. Cook the apple filling: In a large skillet over medium heat, melt 2 tablespoons butter. Add sliced apples, 2 tablespoons brown sugar, 1 tablespoon lemon juice, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Cook, stirring occasionally, for 5-7 minutes until apples have softened slightly. Sprinkle 1 tablespoon flour over apples and stir for 1 minute. Remove from heat.
  4. Make the crumble topping: In a medium bowl, whisk together 3/4 cup flour, 1/2 cup oats, 1/3 cup brown sugar, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt. Add cold cubed butter. Using your fingertips or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Assemble the crumble: Pour the cooked apple filling into the prepared baking dish. Drizzle about 3/4 of the miso caramel over the apples. Sprinkle the crumble topping evenly over the apples.
  6. Bake: Place the dish on a baking sheet. Bake for 35-40 minutes, until the topping is golden brown and the filling is bubbly. If topping browns too quickly, tent with foil for the last 10 minutes.
  7. Cool and serve: Let the crumble cool on a wire rack for at least 10 minutes. Drizzle remaining miso caramel over the top and sprinkle with flaky sea salt. Serve warm, preferably with vanilla ice cream.

Notes

For the caramel, never leave it unattended; it can burn quickly. If the caramel seizes, gently reheat with a splash of water and whisk vigorously. For the crumble topping, use cold butter for a flaky texture. A mix of Honeycrisp and Granny Smith apples is recommended. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 10-15 minutes.
