Best Easy Cranberry Brie Bites Puff Pastry Recipe

These cranberry brie bites are a quick and easy appetizer made with puff pastry, creamy brie, and tart cranberry sauce. Perfect for holiday parties or any gathering, they come together in under 25 minutes and are always a crowd-pleaser.

  • 1 sheet puff pastry, thawed
  • 4 ounces brie cheese, rind removed
  • 1/3 cup whole berry cranberry sauce
  • 1 large egg, beaten
  • Fresh rosemary or thyme, for garnish (optional)
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, gently unfold your thawed puff pastry sheet. Using a sharp knife or pizza cutter, cut the pastry into 16 equal squares, about 2 inches each.
  3. While the brie is still cold, use a sharp knife to remove the white rind. Cut the brie into 16 small cubes, roughly 1/2 inch each.
  4. Place the puff pastry squares on your prepared baking sheet, spacing them about 1 inch apart. Place one cube of brie in the center of each square.
  5. Spoon a small dollop of cranberry sauce on top of each brie cube, about 1/2 teaspoon per bite.
  6. In a small bowl, beat the egg with a teaspoon of water until smooth. Using a pastry brush, gently brush the edges of each pastry square with the egg wash.
  7. Bake for 12-15 minutes, or until the pastry is puffed up and deeply golden brown.
  8. Remove from the oven and let the bites cool on the baking sheet for 2-3 minutes. Sprinkle with flaky sea salt and a tiny sprig of fresh rosemary or thyme if using.
  9. Serve warm.

Notes

Keep the pastry cold for best flakiness. Don’t skip the egg wash for a golden finish. Let the bites rest for 2-3 minutes after baking to prevent burnt tongues and allow the brie to set slightly. You can assemble the bites (minus egg wash) up to 2 hours ahead and refrigerate.
