Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (110g) packed light brown sugar
  • 1/2 cup (130g) creamy peanut butter (e.g., Jif or Skippy)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 36–40 dark chocolate kisses, unwrapped (e.g., Hershey’s Dark Chocolate Kisses)
  • 1/4 cup (50g) granulated sugar, for rolling

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes with a hand mixer on medium speed.
  3. Beat in the peanut butter until smooth, then add the egg and vanilla extract. Mix until just combined. Scrape down the sides of the bowl.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. The dough will be soft and slightly sticky.
  6. If the dough feels too sticky, chill it in the fridge for 20 minutes.
  7. Scoop about 1.5 tablespoons of dough and roll into a smooth ball. Roll each ball in the bowl of granulated sugar until coated. Place on prepared baking sheets, spacing them about 2 inches apart.
  8. Bake one sheet at a time on the middle rack for 10-12 minutes, until puffed and lightly golden around the edges. The centers should look soft and slightly underdone.
  9. Immediately after removing from the oven, gently press one dark chocolate kiss into the center of each cookie until the cookie cracks slightly around the edges.
  10. Let the cookies sit on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For best results, use creamy peanut butter like Jif or Skippy. Natural peanut butter may cause greasier cookies. If using natural peanut butter, stir well and add an extra tablespoon of flour. Chill dough if kitchen is warm to prevent spreading. Unwrap kisses while cookies bake to save time. Bake one sheet at a time for even browning. Cookies taste even better the next day.
