A forgiving and delicious pumpkin roll cake with a rich, tangy cream cheese filling. This recipe uses a special rolling technique to prevent cracking, resulting in a light, airy sponge that captures the cozy flavors of autumn.

Ingredients

  • Large eggs (room temperature)
  • Granulated sugar
  • 100% pure pumpkin puree
  • Vegetable oil
  • All-purpose flour
  • Baking powder
  • Baking soda
  • Pumpkin pie spice
  • Salt
  • Full-fat cream cheese (softened to room temperature)
  • Heavy cream
  • Powdered sugar
  • Vanilla extract
  • Powdered sugar (for dusting towel and finishing)
  • Non-stick spray

Instructions

  1. Preheat oven to 375°F (190°C). Line a 10×15 inch jelly roll pan with parchment paper and grease lightly with non-stick spray.
  2. In a large bowl, beat eggs and granulated sugar on high speed for 5-7 minutes until pale, thick, and tripled in volume (ribbon stage).
  3. In a separate small bowl, whisk pumpkin puree and vegetable oil until smooth. Gently fold this mixture into the egg mixture.
  4. Sift flour, baking powder, baking soda, pumpkin pie spice, and salt over the batter. Fold gently until just combined.
  5. Pour batter into prepared pan and spread evenly. Bake for 12-15 minutes until edges pull away and center springs back.
  6. While cake bakes, lay a clean kitchen towel on counter and dust generously with powdered sugar.
  7. As soon as cake is done, loosen edges with a knife and invert onto the powdered towel. Peel off parchment paper.
  8. Starting from the short end, roll the cake up tightly with the towel inside. Let cool completely in this rolled position for at least 1 hour.
  9. Beat softened cream cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
  10. Unroll the cooled cake carefully. Spread cream cheese filling evenly over the surface, leaving a small border at edges.
  11. Carefully re-roll the cake without the towel. Dust top with additional powdered sugar or pumpkin pie spice before serving.

Notes

Ensure eggs are at room temperature for proper whipping. Do not overbake the cake or it will crack. Roll the cake while warm for the first time to set the shape. For the second roll, ensure the cake is completely cool. If using gluten-free flour, ensure the blend contains xanthan gum.
