Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup dried cranberries, roughly chopped
  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 4 ounces white chocolate chips
  • 1 tablespoon heavy cream
  • 1/4 cup dried cranberries, roughly chopped (for topping)
  • 2 tablespoons white chocolate chips, melted (for drizzling)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides. Lightly grease the parchment.
  2. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add egg and vanilla extract; beat until combined.
  3. In a separate bowl, whisk together flour, salt, and baking powder. Gradually add to butter mixture, mixing on low until just combined. Fold in chopped dried cranberries.
  4. Press dough evenly into prepared pan. Bake for 18-22 minutes, until edges are lightly golden and center is set. Cool in pan on a wire rack for 15 minutes, then lift out and cool completely.
  5. For frosting: In a microwave-safe bowl, melt white chocolate chips with heavy cream in 20-second bursts, stirring between each, until smooth. Set aside to cool slightly.
  6. In another bowl, beat softened cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until fluffy. Pour in melted white chocolate mixture and beat until combined.
  7. Spread frosting evenly over cooled shortbread. Sprinkle chopped dried cranberries on top. Drizzle melted white chocolate over bars.
  8. Refrigerate for at least 30 minutes to set frosting. Cut into 12-16 bars with a sharp knife, wiping clean between cuts.

Notes

Do not overbake the shortbread; it should be just set and barely golden. Let the shortbread cool completely before frosting to avoid melting. Use quality white chocolate like Ghirardelli for smooth melting. Chill bars before cutting for clean slices.
