  • 68 fresh jalapeños, medium-sized
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 12 slices thin-cut bacon, cut in half crosswise
  • Optional: 1/4 cup chopped green onions
  • Optional: 1/4 teaspoon smoked paprika
  • Optional: A pinch of cayenne pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Place a wire rack on the baking sheet if available.
  2. Wash and dry jalapeños. Cut each in half lengthwise. Use a small spoon to remove white membranes and seeds. Wear gloves or wash hands immediately after handling.
  3. In a small mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, and a pinch of salt and pepper. Mix until smooth.
  4. Fill each jalapeño half generously with the cream cheese mixture, mounding slightly above the edge.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice around the middle of each stuffed jalapeño half, overlapping ends on the bottom. Place seam-side down on the prepared baking sheet.
  6. Bake for 18-22 minutes, until bacon is crispy and golden brown. If not using a wire rack, flip bites halfway through at the 10-minute mark.
  7. Remove from oven and let cool on the pan for 5 minutes.
  8. Transfer to a serving platter. Garnish with chopped cilantro or green onions if desired. Serve warm.

Notes

For less spice, remove all white membranes and seeds. For extra heat, leave some seeds. Thin-cut bacon is essential for even cooking. A wire rack helps bacon crisp on all sides. Make ahead: stuff and wrap up to 24 hours in advance, refrigerate, then add 5 minutes to baking time. Reheat in a 350°F oven or air fryer for 5-7 minutes. Freeze unbaked or baked.
